First of all, I want to say that the skottelbraai is an excellent invention and we use it all the time.


For many years, we have been very satisfied users of Cadac’s barbecue dish; on the campground we use it more often than the gas stove in the caravan; my wife is happy with that because I do the barbecuing so she doesn’t have to cook.


My favourite cooking appliance is the skottelbraai. It was a success when we were in France. Amongst the things I produced on it was a rice dish. Frying chips and pancakes in the skottel works perfectly, you only have to know how, but then you’ve got it made.


Pizzas
If you have the entire skottel set with lid, then try using the barbecue top with oven lid to bake pizzas out of the freezer. You can bake 2 pizzas at the same time if you halve one of them. I always let the pizzas defrost before use. Then we place them on the barbecue grill (with the appropriate plate underneath), lid on top, then let them bake at the lowest flame. If you turn the heat up just a little too high you will burn them! You need about 10 to 15 minutes per baking session, depending on the type and thickness of the pizza. Together with our camping neighbours, this summer, we must have baked about 20 pizzas without burning a single one. Cheaper and often tastier than those in the campground restaurant.


Macaroni and rice
If you’re preparing a macaroni or rice dish on the skottelbraai or in a wok, after the vegetables and meat are done add one and a half litres of water and then the macaroni or rice. Cook until the liquid has evaporated and your macaroni or rice is ready. In this way you don’t have to cook the macaroni or rice separately. The taste is the same and it saves another pot in the washing-up.
